Having the header tag each one shows importance of this content. H1 being the most important and there should only really be one of these per page. There may be many types of potatoes in a supermarket and in webpage these would be shown by lower-level header tags h2 through to h6 showing the search engine importance and relevance of each of the bits of content.

These header tags help search engines help visitors to find the right content and provide the right search results.

But again, with all search engine optimisation never try to think you can outsmart the algorithms as they will clearly see through any tricks to stuff keywords into your site and for all your efforts you will be penalised accordingly.
